The standard cuts are as follows:
approximately 3 to 4 pounds of sausage.
½ slab of bacon weighing approximately 4 pounds
½ of a jowel approximately 1 pound
1 or 2 ham steaks
½ ham weighing approximately 8 or 9 pounds
Pork shoulder approximately 7 pounds
½ loin cut into approximately 16 pork chops
